Fridays of Lent are days of abstinence from meat. I like to keep the meals simple. My favorites are toasted cheese or tuna sandwiches with tomato soup, tuna fish casserole, and spaghetti squash with shrimp. All of these are fairly easy to prepare and recipes are easy. I tend to make them like my mother did.
At my new parish the Knights of Columbus offer Lenten meals on Fridays before Stations of the Cross. Today they had toasted cheese sandwiches with tomato soup. So Jim and I stopped there for supper and enjoyed the company of a few parishioners while we partook.
